PRODUCING HIGH-QUALITY SUNFLOWER OIL IS A MAJOR CHALLENGE

Producing high quality virgin sunflower oil is a challenge for the food industry due to the waxy films in 30% of seeds. These films, co-extracted with the oil during pressing, cause undesirable turbidity.

To solve this problem, two methods are being studied: the peeling of seeds and winterization (operation which aims at stabilizing the oils on a physico-chemical level during their conservation) of the oil obtained. The peeling, carried out with an impact peeler, allows to eliminate the films thanks to the combined action of air and gravity. This step improves the sensory quality of the oil, giving it a sweet taste of sunflower seeds. On the other hand, oils from whole seeds often taste woody and bitter. In addition, peeling reduces heat development during pressing when shelled seeds are used, improving the production process.
